Salad Recipes

With it being so hot right now, who wants to cook! Anyone have some good salad recipes they are going to try with this week's share?

We chopped up some of the peppercress, some parsley, and crumbled in some fresh feta with the lettuce from our share.  Little balsamic vinaigrette.  Yum!  I think grape tomatoes would be a nice addition, but we were too lazy to go to the store in the heat.

I made a salad last night with this week's greens (I can't remember the name, but it was the greens option with small yellow flowers).  I mixed it with the red lettuce, about 1 part greens - 4 parts red lettuce.  I sliced up a few radishes, a store-bought cucumber, & some sliced almonds.  Served with a ranch dressing.

I also cooked the Jerusalem artichokes with a lemon-pepper chicken recipe.  And I used the peppercress to liven up a minty rice pilaf.

My go-to salad these past weeks (hearty enough for a meal):
kholrabi (raw, sliced thin)
broccoli (steamed for 3 minutes)
sugar snap peas
goat cheese
chickpeas (optional)

1 part each:
good dijon mustard
olive oil
lemon juice

Yum that sounds soooo good and nice for the summer, thanks for sharing!
